From conversations over glasses of wine to those over late-night lamp oil, many friends, acquaintances, and colleagues inside and outside academia were essential in bringing this project to fruition. They range from Pierre Brigandat, who offered me my first job in Champagne, France, in the late 1980s, to Bob Wesley, who taught me to drink and understand Burgundy, and Mark Whitmore, who gave me the chance to work in the wine-importing business in the 1990s. These individuals provided me with my first taste of terroir.
Many people were as generous with their knowledge and time in helping to shape the intellectual side of my project. At Vassar, I would like to thank Susan Hiner and Cindy Kerr, who read and commented on portions of the manuscript. Pierre Force and the Columbia University Early Modern Salon provided enthusiasm, inspiration, and direction by reading and commenting on an early chapter. I owe a particular debt of gratitude to François Rigolot, who was an enormous help in the Renaissance portion of the book, reading, making suggestions, and developing my working bibliography as the manuscript began to take shape. Colleagues at the North American Society for Seventeenth-Century French Literature, the Society for Interdisciplinary French Seventeenth-Century Studies, the Kentucky Foreign Language Conference, Atlantic World Foodways, and the Université de Bourgogne have listened to and commented on oral versions of many of this book’s chapters. I could not have completed the project without their advice. Later, Michael Garval and Priscilla Ferguson were central in providing help as I selected artwork and a cover image. Most of all, Pauline LeVen was there throughout the writing process to provide thoughtful feedback and help me develop ideas.
